It’s hard to believe that Thanksgiving is almost here! The moment you enter the grocery store you cannot miss it! There will be table settings with beautiful warm, earth toned platters and napkins on display! Amazing pictures of glistening turkeys displayed all over with jewel toned cranberry relish on the side! Rich, golden pumpkin pies, bowls overflowing with beans, rolls and mashed potatoes. It’s hard not to be swept away by the thanksgiving Food mania 🙂
In our house also we really look forward to it! All of us are foodies so here we have this entire day spent cooking and eating, what’s not to like 🙂 Some years we do a potluck with our close family friends and some just with family if we have people visiting. But regardless, we have a huge Thanksgiving Feast planned! My daughters since the past few years have been taking charge of the desserts for that day. My older daughter is in charge of the apple crisp, a dessert that definitely graces our table that night. The recipe we make has been adapted from The Neely’s .
The first thing my husband said when he tasted this apple crisp was that it tastes fantastic! ! It was sweet, with the familiar gooey warmth. No different than a regular apple crisp. Certainly not one without half the sugar, fat and calories of a normal apple crisp! That, ladies and gentleman; let me tell you is quite a validation from a person with a “major” sweet tooth 🙂 So please do give it a try at your Thanksgiving meal or any other time of the year! Have a great dessert without any guilt and be thankful for all the things we take for granted in life!
Ingredients:
Filling:
Granny Smith apples – 4 to 5 medium (peeled, and diced small)
Walnuts or pecans — ¼ cup, chopped
Organic oat flour — 3 Tbs
Brown sugar — ¼ cup
Maple syrup — 1 Tbs
Lemon juice — 2 tsp
Topping:
Organic oat flour — ¼ cup
Organic rolled oats — ½ cup
Brown sugar — ¼ cup
Ground cinnamon — ¼ tsp
Dash of allspice
Salt — ¼ tsp
Canola oil — 4 Tbs
Walnuts or pecans — ¼ cup, chopped
Directions:
- Preheat oven to 350 degrees F.
- To first prepare the filling, mix all the ingredients together in a bowl.
- Place into an 8x8x2 Pyrex dish or 7 to 8-ounce ramekins for individual servings.
- To prepare the topping, mix all the ingredients together in a bowl using a spatula.
- Make sure no sugar lumps are there.
- Spread the topping mixture over the filling.
- Bake it for 40 to 45 minutes.
- Enjoy with vanilla ice cream or a la carte!
